Ingredients
  

Noodles
  • 8 oz rice noodles cooked according to package instructions
Vegetables
  • 1 cup shredded carrots
  • 1 cup cucumber thinly sliced
  • 1 cup red bell pepper thinly sliced
  • 1 cup red cabbage shredded
  • 1/2 cup green onions sliced
Dressing
  • 1/4 cup peanut butter smooth
  • 2 tbsp soy sauce low sodium
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 inch ginger grated
  • 1 tbsp water to thin the dressing
Garnish
  • 1/4 cup chopped peanuts for topping
  • 1/4 cup cilantro fresh, chopped

Method
 

Prepare the Noodles
  1. Cook the rice noodles according to package instructions, then drain and rinse under cold water.
Make the Dressing
  1. In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, ginger, and water until smooth.
Combine Salad
  1. In a large bowl, combine the cooked noodles, shredded carrots, cucumber, red bell pepper, red cabbage, and green onions.
  2. Pour the dressing over the salad and toss to combine.
Serve
  1. Garnish with chopped peanuts and cilantro before serving.
