Ingredients
  

Filling
  • 4 cups tart cherries pitted and fresh or frozen
  • 1 cup granulated sugar adjust based on sweetness preference
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
Topping
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine tart cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Mix well and set aside.
Make the Topping
  1. In another bowl, combine oats, flour, brown sugar, melted butter, cinnamon, and salt. Mix until crumbly.
Assemble and Bake
  1. Spread the cherry mixture evenly in a baking dish. Sprinkle the oat topping over the cherries. Bake for 30 minutes or until the topping is golden brown and the cherries are bubbly.
Serve
  1. Let cool for a few minutes before serving. Enjoy warm or at room temperature, optionally with vanilla ice cream.
