Method
Prepare the Meat
- Preheat the oven to 350°F (175°C). In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the taco seasoning, black beans, corn, and a splash of water. Stir and cook for an additional 5 minutes.
Assemble the Casserole
- In a baking dish, layer half of the crushed tortilla chips, followed by half of the meat mixture, half of the salsa, and half of the cheese.
- Repeat the layers with the remaining ingredients, finishing with cheese on top.
Bake
- Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serve
- Let the casserole cool for a few minutes before serving. Top with lettuce, diced tomatoes, sour cream, and jalapeños if desired.
