Ingredients
  

Corn
  • 4 ears sweet corn husked
Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 clove garlic minced
Toppings
  • 1 cup cotija cheese crumbled
  • 2 tablespoons cilantro chopped
  • 1 teaspoon smoked paprika
  • 1 lime lime wedges for serving

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat.
  2. Place the husked corn on the grill and cook for about 10-15 minutes, turning occasionally, until charred and tender.
Preparing the Sauce
  1. In a bowl, mix together mayonnaise, sour cream, lime juice, chili powder, and minced garlic until well combined.
Assembling the Dish
  1. Once the corn is grilled, remove it from the grill and brush it generously with the sauce.
  2. Sprinkle crumbled cotija cheese, chopped cilantro, and smoked paprika on top.
  3. Serve with lime wedges on the side.

Notes
