Ingredients
  

Spring Rolls
  • 8 pieces rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1 cup red bell pepper julienned
  • 1 cup bean sprouts
  • 1 cup fresh cilantro chopped
  • 1 cup cooked vermicelli noodles
Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 clove garlic minced
  • 2 tablespoons water to thin the sauce
  • 1 teaspoon sesame oil

Method
 

Prepare the Spring Rolls
  1. Soak rice paper wrappers in warm water for about 10-15 seconds until soft.
  2. Lay the softened wrapper on a clean surface and place a small amount of each filling ingredient in the center.
  3. Fold the sides of the wrapper over the filling, then roll it tightly from the bottom up.
  4. Repeat with remaining wrappers and filling ingredients.
Make the Peanut Sauce
  1. In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, honey, minced garlic, and sesame oil.
  2. Whisk together until smooth, adding water to reach desired consistency.
Serve
  1. Arrange spring rolls on a serving dish and serve with peanut sauce on the side.
