Ingredients
  

Pie Crust
  • 1 each pre-made pie crust or homemade
Filling
  • 4 cups sliced fresh tomatoes preferably heirloom
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Crust
  1. Preheat the oven to 375°F (190°C). Place the pie crust in the pie dish and set aside.
Prepare the Filling
  1. In a mixing bowl, combine the sliced tomatoes, mozzarella cheese, cheddar cheese, mayonnaise, basil, thyme, salt, and pepper. Mix well.
Assemble the Pie
  1. Pour the tomato mixture into the prepared pie crust, spreading it evenly.
Bake
  1. Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
Serve
  1. Allow the pie to cool for a few minutes before slicing and serving.
