Ingredients
  

  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup jasmine or basmati rice
  • 1 cup mixed bell peppers, chopped red, yellow, green
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fresh lime juice
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Rinse the rice under cold water until clear. Cook according to package instructions.
  2. While the rice cooks, chop the bell peppers and slice the green onions.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
  4. Add shrimp to the skillet; season with salt and pepper. Cook for about 3 minutes per side until pink and opaque.
  5. Stir in chopped bell peppers; cook for an additional 2 minutes until slightly tender.
  6. Mix soy sauce and lime juice in a bowl; pour over shrimp and veggies. Simmer for 2 minutes.
  7. Serve over rice and garnish with green onions.
