Ingredients
  

  • 1 lb fresh salmon fillet, chopped
  • 1 cup panko breadcrumbs
  • 1 large egg
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh dill, chopped
  • 1 ripe avocado
  • 2 tbsp lemon juice
  • ½ cup Greek yogurt

Method
 

  1. Preheat oven to 400°F (200°C). Chop the salmon into small pieces.
  2. In a bowl, mix chopped salmon, panko breadcrumbs, egg, Dijon mustard, and dill until well combined.
  3. Shape the mixture into golf ball-sized balls.
  4. Place on a greased baking sheet and bake for 15-20 minutes until golden brown.
  5. For the sauce, mash avocado in a bowl and mix in lemon juice and Greek yogurt until smooth.
  6. Serve salmon balls drizzled with avocado sauce.
