Salmon and Pasta

A delicious and healthy dish combining tender salmon with pasta, tossed in a light lemon and garlic sauce.

Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Salmon
  • 1 lb salmon fillet skinless
Sauce
  • 3 tbsp olive oil extra virgin
  • 3 cloves garlic minced
  • 1 lemon juice freshly squeezed
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1/4 cup fresh parsley chopped

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Cooking the Salmon
  1. In a skillet, heat olive oil over medium heat. Season the salmon fillet with salt and pepper.
  2. Place the salmon in the skillet and cook for about 4-5 minutes on each side, or until cooked through. Remove from skillet and flake into large pieces.
Making the Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  2. Add lemon juice and reserved pasta water, stirring to combine.
Combining Everything
  1. Add the drained pasta and flaked salmon to the skillet. Toss gently to combine, adding chopped parsley.
  2. Serve immediately, garnished with additional parsley if desired.

Notes

For added flavor, consider adding red pepper flakes for a bit of heat.
