Ingredients
  

  • 1 lb flank or sirloin steak strips
  • 2 cups cooked rice white or brown
  • 1 cup queso cheese sauce store-bought or homemade
  • 1 cup bell peppers chopped (mixed red and green)
  • 1 medium onion finely chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt to taste
  • Pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Prepare ingredients by slicing steak into strips and chopping bell peppers and onion.
  2. In a skillet over medium-high heat, add olive oil. Sear the steak strips for 5-7 minutes until browned; season with salt, pepper, cumin, and paprika.
  3. Remove the steak from the skillet; sauté onions and bell peppers in the same skillet for about 4-5 minutes until softened.
  4. Return the steak to the skillet, add cooked rice and queso cheese sauce. Stir well until heated through (about 1 minute).
  5. Serve hot, garnished with optional fresh cilantro or jalapeños.
