Ingredients
  

Pasta
  • 8 oz pasta (fusilli or rotini) cooked and cooled
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
Herbs
  • 1/4 cup fresh parsley chopped

Method
 

Prepare Pasta
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
Mix Vegetables
  1. In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
Make Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, black pepper, and Italian seasoning.
Combine
  1. Add the cooled pasta and dressing to the vegetable mixture. Toss to combine. Stir in chopped parsley.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
