Ingredients
  

Pasta
  • 12 oz Pasta (e.g., penne or fettuccine) Choose your favorite type of pasta.
Vegetables
  • 1 cup Bell peppers (sliced) Use a mix of colors for visual appeal.
  • 1 cup Zucchini (sliced)
  • 1 cup Carrots (sliced) Julienne for quicker cooking.
  • 1 cup Cherry tomatoes (halved)
  • 1 cup Broccoli florets
Sauce
  • 3 tablespoons Olive oil Extra virgin for best flavor.
  • 2 cloves Garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1 cup Vegetable broth
  • 1 cup Parmesan cheese (grated) For serving.
Seasoning
  • to taste Salt
  • to taste Black pepper

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté Vegetables
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add bell peppers, zucchini, carrots, and broccoli. Cook for about 5-7 minutes until vegetables are tender but still crisp.
  3. Stir in cherry tomatoes and Italian seasoning, cooking for an additional 2 minutes.
Combine
  1. Add the cooked pasta to the skillet with the vegetables. Pour in vegetable broth and toss everything together. Cook for another 2-3 minutes until heated through.
  2. Season with salt and black pepper to taste. Serve hot, topped with grated Parmesan cheese.
