Ingredients
  

Salad Ingredients
  • 2 cups shredded green papaya peeled and julienned
  • 1 cup shredded carrots peeled and julienned
  • 1 cup cherry tomatoes halved
  • 1/2 cup green beans trimmed and cut into 1-inch pieces
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup peanuts crushed
Dressing Ingredients
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon palm sugar or brown sugar
  • 1 clove garlic minced
  • 1 small Thai chili sliced

Method
 

Prepare the Salad
  1. In a large bowl, combine the shredded green papaya, shredded carrots, cherry tomatoes, green beans, and cilantro.
Make the Dressing
  1. In a mortar and pestle, combine the garlic, Thai chili, and palm sugar. Pound until a paste forms.
  2. Add the fish sauce and lime juice, mixing well to combine.
Combine and Serve
  1. Pour the dressing over the salad and toss to combine. Top with crushed peanuts before serving.
