Mexican Lasagna with Tortillas

A delicious twist on traditional lasagna, using tortillas instead of pasta, layered with seasoned ground beef, cheese, and a zesty tomato sauce.

Ingredients
  

Meat and Sauce
  • 1 lb ground beef or ground turkey
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa your choice of heat
  • 1 packet taco seasoning
Layers
  • 8 oz tortillas corn or flour
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup sour cream

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add black beans, corn, salsa, and taco seasoning to the skillet. Stir to combine and cook for 5 minutes.
Assemble the Lasagna
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of the meat mixture on the bottom of a 9x13 inch baking dish.
  3. Layer 3 tortillas over the meat mixture, then spread half of the sour cream and a layer of cheese.
  4. Repeat the layers: meat mixture, tortillas, sour cream, and cheese. Finish with a final layer of tortillas and top with remaining cheese.
Bake
  1. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  2. Let it cool for 5 minutes before slicing and serving.
