Ingredients
  

  • 1 lb lean ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp ground cumin
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tsp chili powder
  • 2 cups chopped vegetables (e.g., bell peppers, spinach)
  • salt and pepper to taste
  • fresh herbs for garnish (cilantro or mint)

Method
 

  1. In a large skillet over medium heat, add a splash of oil. Sauté diced onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook until fragrant.
  2. Add ground turkey, breaking it up with a spatula. Cook until browned all over (about 7 minutes).
  3. Stir in cumin and chili powder; toast spices for enhanced flavor.
  4. Pour in coconut milk and stir well to combine. Simmer for about 10 minutes.
  5. While the turkey simmers, chop your favorite vegetables and add them to the skillet during the last few minutes of cooking or serve fresh on top.
  6. Serve in bowls topped with fresh herbs and optional toasted nuts or seeds.
