Beef Filling
  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced

  • 8 corn tortillas or flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 2 cups enchilada sauce

  • fresh cilantro

Method
 

Cooking Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté the diced onion in a splash of oil until golden brown. Add minced garlic and cook for an additional minute.
  3. Add the ground beef to the skillet and cook until browned and crumbly. Drain excess grease if necessary.
  4. Spoon the beef mixture onto each tortilla, sprinkle with cheese, then roll tightly. Place seam side down in a greased baking dish.
  5. Pour enchilada sauce over the rolled enchiladas and add remaining cheese on top.
  6. Bake for 20-25 minutes until bubbly and golden brown.
