Ingredients
  

Salad Ingredients
  • 1 pound fresh green beans trimmed and ends removed
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Green Beans
  1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-5 minutes until bright green and tender-crisp.
  2. Drain the green beans in a colander and immediately transfer to a bowl of ice water to stop the cooking process.
Make the Vinaigrette
  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.
Assemble the Salad
  1. In a large bowl, combine the cooled green beans, cherry tomatoes, red onion, and feta cheese.
  2. Drizzle the vinaigrette over the salad and toss gently to combine.
  3. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
