Method
 

Cooking Instructions
  1. Preheat oven to 425°F (220°C).
  2. Wash and cut the Yukon Gold potatoes into uniform pieces.
  3. In a large bowl, combine potatoes with olive oil, garlic, oregano, thyme, salt, and pepper; mix until well-coated.
  4. Spread potatoes on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown.
  5. Remove from oven and sprinkle feta cheese over hot potatoes; drizzle with lemon juice.
  6. Return to the oven for an additional 5-10 minutes until everything is warmed through.
  7. Serve warm, garnished with extra herbs if desired.
