Elote, or Mexican street corn, is a delicious grilled corn on the cob slathered with a creamy sauce, sprinkled with cheese, and topped with chili powder.

Ingredients
  

Corn
  • 4 ears corn on the cob husked
Sauce
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
Toppings
  • 1/2 cup cotija cheese crumbled
  • 1 teaspoon chili powder
  • 1 tablespoon cilantro chopped

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat.
  2. Place the husked corn on the grill and cook for about 10-15 minutes, turning occasionally until charred.
Preparing the Sauce
  1. In a bowl, mix together mayonnaise, sour cream, lime juice, garlic powder, and salt until well combined.
Assembling the Elote
  1. Once the corn is grilled, remove it from the grill and brush the sauce generously over each ear of corn.
  2. Sprinkle crumbled cotija cheese, chili powder, and chopped cilantro on top.
