Ingredients
  

  • 1 lb lean ground beef
  • 2 cups cooked rice can use brown or white rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp chili powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish.
  2. In a skillet over medium heat, brown the ground beef until crumbly; drain excess fat.
  3. In a large bowl, mix together cooked rice, browned beef, diced onion, half of the shredded cheese, canned tomatoes, garlic powder, chili powder, salt, and pepper.
  4. Pour the mixture into the prepared baking dish and top with remaining shredded cheese.
  5. Bake for 25-30 minutes until bubbly and golden brown.
  6. Allow to cool slightly before serving.
