  • 1 pound lean ground turkey
  • 1/2 cup buffalo sauce
  • 1 1/2 cups shredded cheddar and Monterey Jack cheese blend
  • 4 large flour tortillas
  • 1/2 cup sour cream for serving
  • 2 tablespoons green onions, chopped for topping
  • 1 cup shredded lettuce for serving

  1. In a large skillet over medium heat, cook the ground turkey until browned and no longer pink, about 5-7 minutes.
  2. Stir in the buffalo sauce, allowing it to simmer for an additional 2 minutes.
  3. Lay a tortilla flat, sprinkle one side with cheese, then add a generous spoonful of the turkey mixture and top with more cheese before folding.
  4. In the same skillet, cook each folded quesadilla for about 3 minutes per side until golden brown and crispy.
  5. Slice into wedges and top with sour cream and chopped green onions.
