Ingredients
  

  • 1 lb ground beef
  • 1 cup onion (chopped)
  • 2 cloves garlic (minced)
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup enchilada sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 cup cheddar cheese (shredded)
  • 6 pieces corn tortillas (cut into quarters)
  • 1 cup cheddar cheese (for topping)
  • 1 cup sour cream (for serving)

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef with chopped onion and minced garlic until browned.
  3. Add black beans, corn, enchilada sauce, cumin, chili powder, and salt to the skillet. Stir to combine.
  4. In a baking dish, layer the corn tortillas, followed by half of the beef mixture, and half of the cheddar cheese. Repeat the layers.
  5. Top with remaining cheddar cheese.
  6. Bake in the preheated oven for 30 minutes until cheese is melted and bubbly.
  7. Serve hot, garnished with sour cream.
