Chicken Filling
  • 3-4 pieces boneless, skinless chicken breasts (about 1 pound)
  • 2 cloves fresh garlic (minced)
  • 1 cup shredded Monterey Jack cheese divided
  • 1 can diced green chiles (4 oz)
  • 8 oz cream cheese
Enchiladas Assembly
  • 4 large flour tortillas
  • 1 can green enchilada sauce (10 oz)
  • 1 cup sour cream
  • 1 cup low-sodium chicken broth

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a pot, simmer chicken breasts in water or chicken broth until cooked through, about 20-25 minutes. Shred the chicken.
  3. In a bowl, combine shredded chicken with cream cheese, minced garlic, green chiles, and half of the shredded cheese.
  4. Spoon the mixture into each tortilla, roll tightly, and place seam-side down in the baking dish.
  5. Pour the green enchilada sauce over the rolled tortillas and top with remaining cheese.
  6. Bake for 20 minutes until bubbly and golden brown. Drizzle with sour cream before serving.
