  • 4 large bell peppers washed, tops sliced off, and seeds removed
  • 1 lb ground beef can substitute with turkey or lentils
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheese for topping

Method
 

  1. Wash bell peppers, slice off tops, and remove seeds.
  2. In a skillet over medium heat, brown the ground meat with chopped onion. Drain fat if needed. Stir in diced tomatoes, cooked rice, minced garlic, Italian seasoning, salt, and pepper until heated through.
  3. Fill each bell pepper generously with the meat mixture.
  4. Place stuffed peppers upright in the slow cooker.
  5. Pour enough broth or water to cover the bottom of the slow cooker (about half an inch).
  6. Cover and cook on low for 6 hours or high for 3 hours.
