Potatoes and Toppings
  • 4 large Russet potatoes
  • 6 slices thick-cut bacon crispy
  • 1 cup full-fat sour cream
  • ½ cup chopped green onions plus extra for garnish
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Wash the potatoes and poke holes in them; bake for about 45 minutes until tender.
  2. While the potatoes bake, fry the bacon in a skillet over medium heat until crispy. Let it cool and crumble.
  3. Once the potatoes have cooled slightly, chop them into cubes (skin included) and combine them in a large bowl with crumbled bacon, green onions, and cheddar cheese.
  4. Mix in the sour cream and season with salt and pepper; gently stir until combined.
  5. Chill for at least one hour before serving. Stir once more before serving and garnish with additional green onions if desired.
