Ingredients
  

  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 2 cloves garlic minced
  • 1 medium onion chopped
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 4 cups low-sodium chicken broth
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil for sautéing

Method
 

  1. Prepare the meatballs by combining ground beef, breadcrumbs, egg, minced garlic, salt, and pepper in a bowl. Mix gently and form into golf ball-sized meatballs.
  2. In a large pot over medium heat, add olive oil and sauté chopped onion until translucent; then add diced carrots and celery and cook until softened.
  3. Stir in canned tomatoes and chicken broth to build the soup base. Bring to a gentle simmer.
  4. Carefully drop meatballs into the simmering soup and cook for 15-20 minutes until fully cooked.
  5. Taste and adjust seasoning; add spinach or kale if desired.
  6. Ladle into bowls and garnish with parsley if desired.
