- In a bowl, mix 2 tablespoons of olive oil, soy sauce, garlic powder, and black pepper. Add the steak and marinate for at least 30 minutes.
- Toss zucchini slices in the remaining olive oil along with salt and pepper.
- Heat your grill or grill pan to medium-high.
- Remove steak from marinade (reserve marinade) and grill for 4-5 minutes per side for medium-rare. Use a meat thermometer to check for 135°F.
- When flipping the steak, add zucchini to the grill and cook for 2-3 minutes per side until tender.
- Slice steak against the grain and layer it with zucchini in serving bowls. Garnish with cilantro and lime wedges.
