Ingredients
  

  • 1 lb sirloin steak
  • 2 medium zucchinis sliced into half-moons
  • 3 tbsp extra virgin olive oil divided
  • 3 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • 1 tsp freshly cracked black pepper
  • fresh cilantro chopped, for garnish
  • lime wedges for garnish

Method
 

  1. In a bowl, mix 2 tablespoons of olive oil, soy sauce, garlic powder, and black pepper. Add the steak and marinate for at least 30 minutes.
  2. Toss zucchini slices in the remaining olive oil along with salt and pepper.
  3. Heat your grill or grill pan to medium-high.
  4. Remove steak from marinade (reserve marinade) and grill for 4-5 minutes per side for medium-rare. Use a meat thermometer to check for 135°F.
  5. When flipping the steak, add zucchini to the grill and cook for 2-3 minutes per side until tender.
  6. Slice steak against the grain and layer it with zucchini in serving bowls. Garnish with cilantro and lime wedges.
