- In another bowl, mix sugar and vegetable oil until creamy. Add eggs one at a time, then stir in vanilla extract and red food coloring until blended.
- Gradually incorporate the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Scoop tablespoon-sized portions onto prepared baking sheets, spacing them two inches apart. Bake for 10-12 minutes or until edges are set but centers remain soft.
- Allow cookies to cool completely before frosting: beat cream cheese and butter until smooth; gradually add powdered sugar until desired sweetness is reached. Spread generously on each cookie.
