Preparation
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat together the softened butter, eggs, Irish cream, milk, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and mix until combined.
- Divide the batter evenly among the prepared cupcake liners.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely.
- For the ganache, heat the heavy cream in a saucepan until it just starts to simmer.
- Pour the hot cream over the chopped chocolate and let sit for a minute, then stir until smooth.
- Mix in the 2 tbsp of Irish cream liqueur.
- Once the cupcakes are cool, frost with the ganache.
