Wet Ingredients
  • 1/2 cup butter softened
  • 2 large eggs
  • 1/2 cup Irish cream liqueur
  • 1/2 cup milk
  • 1 tsp vanilla extract
Ganache
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate chopped
  • 2 tbsp Irish cream liqueur

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together the softened butter, eggs, Irish cream, milk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until combined.
  5. Divide the batter evenly among the prepared cupcake liners.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cupcakes to cool completely.
  8. For the ganache, heat the heavy cream in a saucepan until it just starts to simmer.
  9. Pour the hot cream over the chopped chocolate and let sit for a minute, then stir until smooth.
  10. Mix in the 2 tbsp of Irish cream liqueur.
  11. Once the cupcakes are cool, frost with the ganache.
