Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts
Spices
  • 1 packet taco seasoning
  • 1 cup salsa preferably mild or medium
Taco Fixings
  • 8 small taco shells soft or hard, as preferred
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream for serving
  • 1/4 cup sliced jalapeños optional

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the taco seasoning over the chicken.
  3. Pour the salsa over the seasoned chicken.
Cook the Chicken
  1. Cover and cook on low for 6 hours or on high for 3 hours.
  2. Once cooked, shred the chicken using two forks and mix it with the sauce in the crockpot.
Assemble Tacos
  1. Warm the taco shells according to package instructions.
  2. Fill each taco shell with the shredded chicken mixture.
  3. Top with lettuce, tomatoes, cheese, sour cream, and jalapeños as desired.
