Ingredients
  

Fritter Mixture
  • 2 medium zucchini grated
  • 1 teaspoon salt for draining zucchini
  • 1 cup all-purpose flour
  • 1 large egg beaten
  • 1 cup grated Parmesan cheese
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley chopped
Cooking Oil
  • 1 cup vegetable oil for frying

Method
 

Prepare Zucchini
  1. Grate the zucchini and place it in a mixing bowl. Sprinkle with salt and let it sit for 10 minutes to draw out moisture.
Make Fritter Mixture
  1. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove excess moisture.
  2. In the same bowl, add flour, beaten egg, Parmesan cheese, black pepper, garlic powder, onion powder, and parsley. Mix until combined.
Fry Fritters
  1. Heat vegetable oil in a frying pan over medium heat. Once hot, scoop spoonfuls of the mixture into the pan, flattening them slightly.
  2. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  3. Remove from the pan and place on paper towels to drain excess oil.
Serve
  1. Serve warm with your favorite dipping sauce.
