Ingredients
  

Fritter Batter
  • 2 cups corn kernels fresh or canned
  • 1 cup all-purpose flour
  • 1 large egg beaten
  • 1/2 cup milk or buttermilk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions chopped
  • 1/4 cup cheddar cheese shredded, optional
For Frying
  • 1 cup vegetable oil for frying

Method
 

Prepare the Batter
  1. In a mixing bowl, combine corn kernels, flour, egg, milk, baking powder, salt, black pepper, green onions, and cheddar cheese. Mix until well combined.
Fry the Fritters
  1. Heat vegetable oil in a frying pan over medium heat.
  2. Scoop about 1/4 cup of the batter and carefully drop it into the hot oil. Flatten slightly with a spatula.
  3. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  4. Remove from the pan and drain on paper towels. Repeat with remaining batter.
Serve
  1. Serve warm with your favorite dipping sauce.
