Ingredients
  

Base Ingredients
  • 2 cans full-fat coconut milk Chilled
  • 3/4 cup granulated sugar Adjust to taste
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
Optional Mix-ins
  • 1/2 cup shredded coconut Toasted, optional
  • 1/2 cup chocolate chips Dairy-free, optional

Method
 

Prepare the Ice Cream Base
  1. In a mixing bowl, whisk together the chilled coconut milk, sugar, vanilla extract, and salt until well combined.
  2. Taste the mixture and adjust the sweetness if necessary.
Chill the Mixture
  1. Cover the bowl and refrigerate the mixture for at least 2 hours or until thoroughly chilled.
Churn the Ice Cream
  1. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Add Mix-ins and Freeze
  1. If using, fold in the shredded coconut and/or chocolate chips.
  2. Transfer the mixture to a freezer-safe container and freeze for at least 2 hours or until firm.
Serve
  1. Scoop the ice cream into bowls and enjoy!
