Ingredients

Tender Vanilla Cake Batter
  • 3 cups (375g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 4 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 1/2 cups whole milk or buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1/2 cup (1 stick) unsalted butter, melted
Gooey Cinnamon Brown Sugar Swirl
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup (200g) dark brown sugar, packed
  • 2 tbsp all-purpose flour
  • 2 tbsp ground Saigon cinnamon
Warm Cream Cheese Glaze
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 3-4 tbsp whole milk or heavy cream (to drizzling consistency)

Method

Step-by-Step Baking
  1. Preheat oven to 350°F (175°C). Generously grease a 9x13-inch glass or ceramic baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. In a separate bowl, whisk together milk, eggs, and vanilla. Stir wet ingredients into dry just until combined, then gently fold in melted butter. Spread batter evenly in pan.
  3. In a medium bowl, mix softened butter, dark brown sugar, 2 tablespoons flour, and cinnamon with a fork until a smooth, thick paste forms.
  4. Drop rounded spoonfuls of cinnamon mixture evenly over the batter. Use a butter knife to swirl deeply in figure-eight patterns throughout the entire pan.
  5. Bake at 350°F (175°C) for 28 to 32 minutes until a toothpick inserted into the center comes out clean with moist crumbs.
  6. While baking, beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth, glossy, and pourable.
  7. Pour glaze generously over the warm cake straight from the oven, allowing it to seep into the cinnamon crevices. Rest 15 minutes, slice, and enjoy warm.
