Cinnamon Roll Brioche French Toast Bake

Method
 

Prepare the Brioche & Custard
  1. Grease a 9x13-inch ceramic baking dish with butter. Cut the brioche loaf into 1-inch cubes and spread them evenly into the prepared dish.
  2. In a large mixing bowl or pitcher, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and fine sea salt until smooth and uniform.
  3. Slowly and evenly pour the custard all over the cubed brioche, pressing down gently with your hands or a spatula so every piece absorbs the rich custard.
Add Cinnamon Swirl & Bake
  1. In a small bowl, whisk together melted butter, dark brown sugar, cinnamon, and flour until a smooth spiced paste forms. Drizzle the cinnamon swirl mixture generously across the top of the casserole, using a butter knife to gently marble it through the bread.
  2. Bake immediately at 350°F (175°C) for 35 to 40 minutes (or cover and chill overnight, adding 5 extra bake minutes), until puffed, golden brown, and set in the center.
Glaze & Serve Warm
  1. While baking, whisk softened cream cheese, powdered sugar, warm milk, and vanilla until smooth and glossy. Drizzle warmly over the freshly baked casserole right before serving.
