Ingredients
  

  • 3 pieces boneless, skinless chicken breasts about 1 lb
  • 4 oz pancetta or bacon
  • 8 oz spaghetti or fettuccine
  • 2 cloves fresh garlic minced
  • 4 pieces egg yolks
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • freshly cracked black pepper to taste
  • salt for pasta water

Method
 

  1. Chop chicken into bite-sized pieces and mince garlic.
  2. Boil salted water in a large pot, add pasta, and cook until al dente; reserve 1 cup of pasta water before draining.
  3. In a skillet over medium heat, cook pancetta until crispy (about 5 minutes). Add chicken and cook until golden brown (about another 5 minutes).
  4. Whisk together egg yolks, cream, Parmesan cheese, and black pepper in a bowl; gradually mix in reserved pasta water until smooth.
  5. Add drained pasta to the skillet and pour sauce over it; toss quickly to combine.
  6. Plate the carbonara and garnish with extra Parmesan cheese.

Notes
