Chewy Spiced Molasses Ginger Crinkle Cookies

Method
 

Whisk Dry Ingredients & Cream Butter
  1. In a medium bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, cloves, and nutmeg until well aerated and aromatic.
  2. In a stand mixer fitted with the paddle attachment (or large bowl with hand mixer), beat softened butter, dark brown sugar, and granulated sugar on medium-high speed for 2 to 3 minutes until light, fluffy, and thoroughly combined.
  3. Add the egg, dark molasses, and vanilla extract. Beat on medium speed for 1 minute until completely glossy and emulsified, scraping down the sides of the bowl.
Combine & Chill Dough
  1. Add the dry flour-spice mixture on low speed in two batches, mixing just until soft dough forms without overworking.
  2. Cover bowl with plastic wrap and chill in the refrigerator for at least 30 minutes (chilling prevents over-spreading and guarantees thick, fudgy centers).
Roll in Sparkling Sugar & Bake
  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper. Place turbinado raw sugar in a shallow bowl.
  2. Scoop dough into 1.5-tablespoon balls (approx 40g each). Roll each ball generously through the turbinado sugar until heavily coated on all sides. Arrange on baking sheets spaced 2.5 inches apart.
  3. Bake at 350°F for exactly 9 to 11 minutes, until edges are set and tops are puffed with deep crackles. The centers will still look soft and underbaked—this is the secret to maximum chewiness!
  4. Cool on the pan for 5 minutes, then transfer to a wire cooling rack. Enjoy warm with a glass of milk or hot spiced tea!
