Ingredients
  

Seafood and Rice
  • 1 lb Fresh shrimp large, peeled, and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp Olive oil
  • 1 cup Long-grain rice
  • 2 cups Chicken broth low-sodium
  • 1 medium Onion finely chopped
  • 1 cup Bell peppers mixed red and green
  • 2 cloves Garlic minced
  • 2 tbsp Green onions sliced

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell peppers; sauté until softened.
  3. Stir in garlic and Cajun seasoning; cook for 1 minute.
  4. Add shrimp and cook until pink, about 3-4 minutes.
  5. Stir in rice and chicken broth; bring to a boil.
  6. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  7. Fluff with a fork and top with green onions before serving.
