Ingredients
  

Cake Batter
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries or frozen, thawed
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter cold and cubed
  • 1 teaspoon cinnamon

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the blueberries.
Make the Streusel Topping
  1. In a small bowl, combine the flour, sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
Bake the Cake
  1. Pour half of the cake batter into the prepared pan. Sprinkle half of the streusel topping over the batter.
  2. Pour the remaining batter on top and finish with the remaining streusel topping.
  3. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, use fresh blueberries. If using frozen, make sure they are thawed and drained to avoid excess moisture.
