Ingredients
  

Rice
  • 4 cups cooked rice preferably day-old for best texture
Vegetables
  • 1 cup peas frozen or fresh
  • 1 cup carrots diced
  • 1 cup green onions sliced
  • 1 cup bell pepper diced
Proteins
  • 2 eggs large eggs beaten
  • 1 cup chicken cooked and diced
Sauces and Seasonings
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon sesame oil for flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger grated or powdered
  • 1 teaspoon black pepper

Method
 

Preparation
  1. Preheat the Blackstone griddle over medium-high heat.
  2. In a mixing bowl, beat the eggs and set aside.
Cooking
  1. Add a little oil to the griddle and pour in the beaten eggs. Scramble until fully cooked, then push to the side.
  2. Add the diced chicken and cook until heated through.
  3. Add the peas, carrots, bell pepper, and green onions. Stir-fry for about 3-4 minutes until vegetables are tender.
  4. Add the cooked rice to the griddle, breaking up any clumps. Stir to combine with the vegetables and chicken.
  5. Pour the soy sauce and sesame oil over the rice. Add garlic powder, ginger, and black pepper. Mix well and cook for another 2-3 minutes.
  6. Serve hot, garnished with additional green onions if desired.
