Ingredients
  

  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons blackening seasoning
  • 2 tablespoons olive oil
  • 8 ounces fettuccine or linguine (or gluten-free pasta)
  • 1 teaspoon salt (for pasta water)
  • 1 cup heavy cream
  • 3 cloves garlic (minced)
  • 1/2 cup Parmesan cheese (freshly grated)
  • 2 tablespoons fresh parsley (chopped)

  • pot for boiling pasta

Method
 

  1. Cook the fettuccine or linguine according to package instructions in salted water.
  2. While the pasta is cooking, heat olive oil in a skillet over medium-high heat.
  3. Toss the shrimp with blackening seasoning.
  4. Add the shrimp to the skillet and cook until they are opaque, about 2-3 minutes per side.
  5. Remove the shrimp from the skillet and set aside.
  6. In the same skillet, add garlic and sauté for 1 minute.
  7. Pour in the heavy cream and bring to a simmer.
  8. Stir in the Parmesan cheese until melted and smooth.
  9. Add the cooked pasta and shrimp to the sauce and toss to combine.
  10. Garnish with fresh parsley before serving.

Notes
